A Day at the Park!

We had a fun-filled day with friends last week, going on ride after ride after ride! It was a perfect day, not too hot, no one in the lines, we were able to walk up to pretty much any ride we wanted!

This is why there was no one there! Look at that sky! But the few hours we were there it was great, and as we were leaving it started to rain and didn't stop for the rest of the evening. It was a perfect day for an end of summer day of fun!

We've been eating a few things out of our yard, which is very exciting! Our carrots grew so well, I wish we had 10 times as much. But having only a few has made them very precious. E says they're the best carrots she's ever had in her life! We're also still eating quite a bit of lettuce from the garden, it's been very productive.
Our apple trees are getting close to harvest and I think they're so beautiful! The little red crabapples are pretty tasty, and I think this week I'm going to try picking a bunch. The big green apples are still pretty tart, but I think in a couple of weeks they're going to be perfect. Hopefully I can keep up with this harvesting, I don't want to waste any, they're all so yummy!

Happy Birthday to Me!

We've been gone since Friday, and a good birthday weekend it was! So sorry to all you well-wishers who couldn't get ahold of me all weekend, I meant to let you all know we were going, but it was busy getting away. Thanks for the messages, hopefully I can talk to you this week! Anyways, here's our busy, fun, birthday weekend! A drive out to the country and tinfoil dinners around the campfire.....

A family reunion (not pictured), a thunderstorm, and then of course, finishing off the night with a fireworks celebration just for me! (Okay, maybe these were for Heritage Days too.)
And then of course, lots of playing with cousins and visiting with friends.... and yummy food and relaxing! A perfect birthday weekend!

Flourless Chocolate Cake.....Yum!

While we're on the subject of gluten free baking, I just thought I'd share this yummy cake I made while at the cabin in Alaska. So yummy! And not too hard, it's worth trying even if you're not gluten free. In fact, I think everyone should switch to flourless chocolate cakes, they're so delicious! They were my favorite chocolate dessert even before cutting out gluten, so I'm sure you can guess how happy I am that they can stay in my repertoire. Although I'd never made one before, I've felt a bit gutsier in my baking endeavors lately. But there's one I've been saving for a special occasion, and I think my 30th birthday coming up this weekend warrants making the most elaborate cake I've ever attempted. Summer Baking.....

This summer's been a bit cooler than past years, but no complaining here! We've still had plenty of sun and warm days, and one benefit is being able to do more baking than I usually do in the summer. A few times a week I've been firing up the oven to test some yummy gluten free treats. This is one of the most popular around here, it's an apple cinnamon streusel muffin. Yum! This is the recipe I start with, and then tweak it a bit to add in teff flour, sorghum flour, and honey. The kids love them, and I'm perfecting the recipe so it's ready when our apple trees are ripe, I forsee many apple recipes in the works this fall!
