Attempted Photo Shoot.....

This is what I get for trying to snap a quick picture of two cute kiddos ready for church! I can get one or the other, but neither holding still. And since daddy was already at meetings and we were running out the door, I took what I could get. You get the idea though, they sure are cute!

Let them eat cake!

Or in this case, bread! Yum! Kate kind of dropped out of the cleanse with me (don't worry Kates, I still love ya!), so these last few days of it have been a little lax. I guess I really need a motivator. But I've still been eating better, I've finished off a huge tub of organic salad greens in the last few days. I was determined I would not let it go wilty in my fridge, as so many other good salad greens have done! Tonight, to celebrate my return to flour products, Emberly and I made bread and cookies! So here's a peek at our fresh ground whole wheat and honey bread and our flax seed oatmeal chocolate chip cookies. It's Mom's bread recipe and a yummy cookie recipe I found on MDC. Enjoy.........

Day 9.......

You may notice that day 8 is missing, I'm not sure if I should blog about yesterday since I started the day off with two pieces of toast! :) At least it was good homemade bread with home-ground wheat. Well, it wasn't all bad, I just couldn't find anything quick for breakfast, the rest of the day was fine. Today has been pretty good as well, I'm definitely relaxing the rules a bit, especially since I had to get to the grocery store tonight so for lunch I didn't have too many options.

Breakfast: Oatmeal with ground flax, coconut milk, 1 tsp honey, almond butter
Lunch: Brown rice with potstickers (kind of cheating but oh well!)
Snack: Almonds
Dinner: Baked potatoes with steamed broccoli and shredded pork
Snack: The most delicious smoothie! (frozen bananas, coconut milk, almond butter, rice milk, and cocoa powder!)

One Week Down.....Day 7

Well, Kate and I are one week done on our cleanse and it's going well. I've probably been cheating a bit more than I should be, but I still feel like I'm eating healthy, and that's the whole purpose of this.

Breakfast: Oatmeal with ground flax seeds, banana, blueberries, and cream (okay, I cheated on the cream again, it's just so good on oatmeal!)
Lunch: Shredded barbeque pork in a sprouted grain wrap, nettle tea
Snack: 4 triscuits crackers, almonds
Dinner: Zucchini, corn, and onion saute
Snack: Air-popped popcorn with butter and salt, kefir with cinnamon

Not too bad, at least I got some veggies in there for dinner. I planned to make a big salad but my whole head of lettuce was frozen stiff in my fridge! Guess I need to stock up again on salad fixings!

I'm one proud mama!

Since it's Mother's Day, I thought I'd post a few pics of my kiddos from the last week. I've had a vew very proud moments this week, those moments when you just can't believe how awesome your kids are! They really are sweethearts, and Emberly's standing here right now helping me pick pictures for my "log" as she calls it! :) Anyways, here's the two little angels around which my world revolves!

And since I'm uploading pictures, here's one of our fun surprise visitors this week! Jesie's husband Nate and his friends were driving up to Alaska for the summer. They're going to be performing as a jazz trio nightly at the Denali Princess Hotel. Jes is already up there, but they were driving through and stopped for a night, it's always so fun to have family come through! Nate is in the middle with his friend Sam on the left and Tyler on the right.

Days 4,5,6 Catching up.......

Does it seem to anyone else that every week starts out with good intentions that seem to fade as the weekend approaches? My cleanse is going pretty well (with a few cheating moments) but my blogging of it has falled by the wayside. I'll try to catch up a bit!

Thursday.....Day 4

Breakfast: Oatmeal with ground flax seeds, almond butter, and rice milk, nettle tea
Lunch: Quinoa with two fried farm eggs
Snack: Almonds, apple, kefir
Dinner: Lentil Stew with fresh tomatoes
Snack: Chocolate banana smoothy! Yum! (Okay, this is kind of a cheat, but a pretty good one I think! It was a frozen banana, almond butter, vanilla rice milk, and cocoa powder, and that's it! I'm not supposed to eat banana, but otherwise, I think this was pretty good!)

Friday......Day 5

Breakfast: Quinoa with two fried eggs
Lunch: Tuna salad with triscuits and cucumbers
Snack: Almonds, kefir
Dinner: Rotisserie chicken, baked potato with butter, salt, and pepper
Snack: Leftover oatmeal with ricemilk, almond butter, and apple

Saturday......Day 6

Breakfast: Leftover oatmeal with butter, almond butter, honey, and cream (okay, this is cheating, I know!)
Snack: Veggies (carrots, cucumber, and cauliflower) with dip (I know, the dip is cheating too!)
Lunch: Quinoa with two fried eggs
Big Cheat!!!! Birthday cake with vanilla ice cream (Okay, we had my neices birthday party at my house today and I tried and tried to hold out, but I just could resist my sister-in-law's homemade birthday cake!)
Dinner: Chicken Salad wrap with almonds, celery, cucumbers and lettuce in a sprouted grain wrap
Snack: Almonds, kefir

Soooooo, as I look back over that, I've cheated a bit, mostly on the little things, like using mayo or a teaspoon of honey. But I definitely fell off the wagon today with that birthday cake! Oh well, I really am feeling well, and I still feel like I'm getting my healthy eating back on track with this week of cleansing. A definitely weak spot I've noticed in my meals is veggies. I think next week I'll make a bigger effort to include more veggies and salads and especially greens. Another week to go! :)

Day 3....Going strong!

Well, today was a good day 3. I think it's getting a bit easier to eat this way, but I'm feeling a little of the detox effects. I had quite a bit of the headachey, nausea feeling this afternoon, but it's much better now. I don't think it's from not eating enough, I've been stuffing myself as much as possible at each meal! :)

Breakfast: Brown rice, two fried farm eggs, rice milk

Lunch: Guacamole (avacado, lime juice, tomatoes, spoonful of salsa), slice of turkey lunchmeat, rice cakes

Snack: Almonds, a few Triscuit crackers (maybe not the greatest, but they're pretty much just wheat, salt, and oil)

Dinner: Spaghetti sauce with hamburger over brown rice, rice milk

Snack: I think I'm going to have an apple :)

Day 2.....a little harder

The cleanse is going well, and let me tell you, it's so nice to know Kate is staying strong with me! Emberly had ballet dress rehearsal tonight and it was so hot here, and I was so tired and hungry on the way home, I almost was tempted by a big yummy Booster Juice! But I saved myself some money and some guilt and came home and made a much more satisfying dinner! I also felt a little headachey and sick this evening, it could be the heat or maybe I'm having withdrawl from sugar! Anyways, here it is.......

Breakfast: Oatmeal with organic blueberries and ground flax seeds, nettle tea

Lunch: Brown rice cakes with Tuna, celery, spinach, and cucumbers

Snack: Almonds

Dinner: Brown rice with beans (leftovers from last night), organic corn tortilla chips, water with lime

Snack: Almonds, organic apple

Baby Blue Eyes

Spring Cleansing......

It's time to give my eating habits a little jumpstart, especially with summer on the way and all the good fresh food available! Katie and I are embarking on a two week cleanse where we follow a nutrition plan and limit certain foods. Basically, we're cutting out flour, sugar, and dairy, and there's a few other guidelines, but that's mostly it. We're trying to focus on whole grains, veggies, and good protein, and cooking from scratch. That's the tricky part, somedays there just isn't time for fully balanced nutrition, but I'm going to try my best! So we're going to use our blogs as accountability journals, posting about what we eat and don't eat, and how it all is going! So if I cheat, you all will know about it! Hopefully this keeps me disciplined!

So today was my first day and here's what I ate......

Breakfast: (okay, so I sort of slept in and there wasn't much to eat in the house, so by the time I got around to fixing myself something, it was more of a brunch/lunch!)

Lunch: brown rice cooked in chicken broth, two fried farm eggs, nettle tea

Snack: brown rice cake with almond butter

Dinner: red kidney and black beans, sauted with onion and spices, over rice, organic yellow corn tortilla chips, ice water with lime juice

Snack: tortilla chips

Not bad for the first day, but I really need to go grocery shopping, this was just on what was in my cupboard. It will get better! :) Wish me luck!

My little princess......

You know, for the longest time, Emberly's been telling us that she wants to be an artist when she grows up, and I've been patting myself on the back and thinking what a great job I've been doing at raising this independent and free thinking individual! So the other day she tells me, "Mom, instead of being an artist when I grow up, I'm going to be a princess in a big castle!" Yep, she's a little princess! And she some how got the idea that all princess have blonde hair (like hers of course) and she told me the other day that I couldn't be a princess because my hair is brown. But Gavin can be a prince because his hair is blonde!

I just love her little imagination, she lives in such a beautiful fairy world! And here she is in her costume for next week's ballet performance, our little girly girl!
